LUCKY PUFF PASTRY CLOVERS
These are the cutest (and easiest) GF puff pastry treats to make for St. Patrick's Day! We filled one with pesto and then topped the other with a sprinkle of pearl sugar. You can really use any filling that makes you happy. So tell us, are you feeling lucky? 🍀

Ingredients:
- 1 Pack GoodLove Puff Pastry
- 2-3 TBSP of Pesto (we like Classico)
- Pearl Sugar (we like Lars Own)
- 1 TBSP White Sugar
- 1 Egg (for egg wash)
Instructions:
- Preheat your oven to 425 degrees.

Using 1 defrosted sheet of our puff pastry, cut off just an inch or so from the width and set aside. This will become your clover stem. With the larger piece of puff, roll out lengthwise with gf flour then spread a light layer of your preferred pesto. Try not to use a super oily one as this tends to weigh down the puff.
- Then, lengthwise, roll in each side of the puff. It should look a log with two little film reels.
- Next, using a sharp knife, slice the log into 18 portions. This will make a total of 6 clovers. With the smaller piece of puff, cut that into 6 rectangles that will be your stems. See images below for help.
- Last, it's time to assemble them. To make sure they fit together well, pinch the base of the so the shape resembles a heart. Then, place a rectanglular piece on a parchment lined pan first. This will become your stem. Brush on egg wash. Finally, you'll need 3 of the heart shapes. Place one at the top with the point of the heart touching the stem. Brush egg wash on the sides and then place two more hearts on other side so it looks like a clover. Press the center where all points meet just to make sure they will stay together when baking. Now, brush the tops of the clovers with a little egg wash and they are ready to bake!
- Bake these at 425 degrees for 25 minutes or until puffed and golden.

For the sweet version, use the second defrosted sheet of puff pastry. Use a square biscuit cutter and cut out about 8 2"x2" squares.
- To shape these, using a sharp knife, cut a small slit at each corner. Then, cut a slightly longer slit at each each side. See images below for help.
- Next it's time to shape them into clovers. Three of the corners will become the leaves of your clover. Press the corners so they are bit more rounded. With the last corner, overlap the two peices and press together to make your stem.
- Lastly, place all the clovers on a parchment lined sheet and brush with egg wash. Sprinkle with white sugar all over, and then add a small pinch of pearl sugar just in the centers.
- Bake at 425 for 20 minutes or until puffed and golden.
- When your sweet and savory clovers are baked and cooled, it's time to plate them! Use a cute wood cutting board or platter and arrange.
