Cinnamon Roll Peach & Pecan Cobbler

Another Palisade Peach Recipe to keep this sweet series going! Everyone loves a good cobbler ... but once you try this Peach Cobbler using our GF Cinnamon Rolls, you'll be hooked. The juicy fresh peaches paired with the spicy sweet cinnamon of our rolls is the duo you never knew you needed. What you'll need:

1 Pack GoodLove Cinnamon Rolls

2 - 3 Ripe Palisade Peaches

1/2 Cup Milk (dairy or non-dairy)

2 TBSP Sugar

1 TBSP Cornstarch

For the Cobbler Topping:

1 Cup Rough Chopped Pecans

1/2 Cup GF Flour

1/4 Cup Brown Sugar

1 Stick Butter (8 TBSP)

1/2 TSP Cinnamon

Pinch of Salt

Instructions:

  1. Preheat oven to 400°
  2. To prepare the cobbler filling, lightly defrost 1 pack of our GF Cinnamon Rolls and set aside the icing. Once soft enough to slice, cut each roll into 6 portion, or feel free to roughly chop.
  3. Next, peel your peaches and slice. Add them to a bowl with the cornstarch and sugar. Mix well and set aside for the peaches to macerate. 
  4. Then, mix your cobbler topping. In another bowl, mix the GF flour, brown sugar, cinnamon and punch of salt with 4 TBSP of the butter. Blend this into the dry ingredients using your fingers until the mixture is a sandy consistency.
  5. Using the other 4 TBSP of butter, melt and brown the butter in an 8 or 10 inch cast iron pan. When the butter is nice and toasted, throw in your defrosted and sliced cinnamon rolls & macerated peaches. Stir just enough so the peaches are distributed evenly, then pour over your preferred milk. 
  6. Lastly, add your crumble topping! Make sure that the topping mixture is covering all of your filling, then bake for about 30 minutes. 
  7. The cobbler should look golden and bubbly when ready! Let it cool first and then drizzle on the icing packet and top heaping scoop of vanilla icing to really complete the dessert. 
  8. Enjoy :)
