Biscuit Strawberry Shortcake

Ingredients:

  • 1 Pack GoodLove Buttermilk Biscuits
  • 1-1/2 Cups Heavy Whipping Cream
  • 1 Pound Fresh Strawberries - washed
  • 1 Lime (optional)
  • 2 TBSP Powdered Sugar
  • 2 TBSP White Sugar

Instructions:

  1. Typically you would bake our biscuits as instructed, but we want a slightly softer interior for these shortcakes. Instead, pre-heat oven to 400 degrees. Place the frozen biscuits on a parchment lined sheet. Brush a little of the whipping cream on the tops and then sprinkle on 1 TBSP of sugar. Bake for 25 minutes. When done, turn off the oven and let the biscuits rest for another 5 minutes. Next, let the biscuits cool completely. The tops should look golden and caramelized from the sugar.
  2. While the biscuits bake, you can prep your juicy strawberries! I prefer them sliced vertically but feel free to cut however you prefer. Place them in a bowl and sprinkle on 1 TBSP of sugar and squeeze in half a lime. Toss lightly then let chill.
  3. Now it's time for the fluffy topping! Add the heavy whipping cream to a large metal bowl with the powdered sugar. Whip with a whisk for about 2-3 minutes. It should thicken fairly quickly. Of course you can always use a hand mixer:) Let chill.
  4. Once the biscuits are cooled and the toppings are nice and cold, you can begin to assemble! These are quite messy (but fun) eating as a sandwich but if you want to go a less sticky-finger route, then do it this way πŸ‘‰ On a plate, pull apart 1 biscuit so you have two halves and place so the soft inside is facing up. Then, pour on a little of the juice from the macerated strawberries so the biscuits start to soak up the syrup. Next, layer on 5 or so strawberry slices and top with a spoonful of whipped cream. Repeat the process so you have a few delicious layers. And that's it!
  5. Use your hands or use a fork, but either way, you will LOVE these shortcakes. Enjoy!
