🎄Cranberry Apple Empanadas

👉 You’ll need apple pie filling (canned works great!), fresh cranberries, cinnamon, white chocolate and egg.
👉 Make a simple apple pie filling and make sure the apples are diced in small cubes. I used about a half can of store bought and then chopped them up a bit. Mix in 1/4 C fresh cranberries & add fresh grated cinnamon.
👉 Roll out 1 sheet of our GF puff to about 1/8 inch thick and cut into 5 inch rounds. If it gets sticky, plastic wrap is a huge help.
👉 Scoop a few tablespoons of filling in the center. Make an egg wash and seal the sweet pockets with a little on the edges.
👉 Place the cuties on a parchment lined pan and slice a few vents into each one. Let ‘em chill in the freezer while your oven preheats to 415 degrees.
👉 Before baking, brush with the rest of the egg wash and sprinkle in just a bit of sugar. Bake for 16-18 minutes.
👉 While they’re cooling, melt some white chocolate and drizzle over the top. Garnish with a few cranberries and then ENJOY!Â
