Naughty~n~Nice Biscuits & Gravy

This is our elevated hot take on biscuits and gravy ... but make it naughty AND nice! We used CO Proud green chili sausage and hot sauce combined with touches of spicy jalapeños, tart raspberries, and cool cream cheese. Your taste buds will be firing on all cylinders with this one. What you'll need:

1 Pack GoodLove Buttermilk Biscuits, baked accordingly 

16 oz sausage, we used Sara's Hatch Green Chili Sausage

1-1/2 Cups Chicken Stock

1-1/2 Cups Whole Milk

2 Tablespoons Butter

2 Tablespoons GF Flour

2 Tablespoons hot sauce, we used Horsetooth Hot Sauce The Green

Raspberry Jam

Cream Cheese

Fresh Jalapeños & Fresh Raspberries for garnish

Salt & Pepper to taste

Instructions:

  1. Prepare your GoodLove Biscuits per the package instructions.
  2. While the biscuits are getting nice and fluffy, prepare your sausage gravy. First, brown the sausage in a cast iron pan and then set aside. Keep all the nice drippings in the pan.
  3. Next, in the same pan melt the better and add 2 tablespoons GF flour. Whisk on medium heat until the butter is melted and the flour cooks for 1-2 minutes. When the flour starts to look really thick, slowly add the stock and whisk until smooth. Then slowly add the milk. Whisk and cook for another 2 minutes until the gravy is shiny and thick. 
  4. When the gravy is done, add the sausage back in and pour in about 2 tablespoons of the hot sauce. Season to taste with a little salt and pepper.
  5. Now it's time to assemble! This next part is optional but totally worth it! Open up a few biscuits on a plate and spread on little bit of cream cheese. Then dollop a little raspberry jam and place the tops of the biscuits back on. 
  6. Finally, pour on that beautiful thick gravy! As the chef's kiss touch, garnish the entire masterpiece with lightly sautéed fresh jalapeños and blistered raspberries. This is where the "naughty and nice" really come out.
